I read today that America could feed the rest of the world with just the food we throw out. This reminded me of my disdain for leftovers. I have never been a fan of leftovers. I am a person who gets really excited about meals. I cook them, I enjoy them and then I'm on to the next. I don't like to have to revisit yesterday's dinner for lunch today. But recently, my husband and I put our family on a budget that pretty much eliminated eating out. So, every week I do my shopping, and by the end of the week, our refrigerator and cupboards are bare.
Now I know that eating at home is not a big deal to most people reading, but let me tell you it has been a change for me. Remember I am in waste and consumption rehab.
But I am encouraged by knowing, after reading this little tidbit, that I am not only saving money by reheating last night's tacos (which were delicious, by the way) I am doing my part to reduce waste. I'm not feeding the world (not yet, at least), but at least I'm not using more than my share.
So, your mother was right. Eat your leftovers. There are people starving all over the world.
